Ok, so the weekend has come and gone and we are approach another weekend, I know you have to be wondering what ever happened to the tomatoes from the tomato experiment on last Saturday? Ok we'll get to that in un momento. Let me tell you what's going on with the book.
As I progress closer and closer to the publishing of this first book in the RV Series (RV=Reluctant Vegetarian) many things are occurring. I am finding my mind being flooded with waves and waves of creativity. Ways to cook this and that; many and varied combinations of flavors and textures; unusual pairings of assorted beverages with the food; and other additions that are going to make this and all the RV books both exciting and informative. I am joyful and grateful for this surge of creativity and I am noticing that I need some balancing parameters to assist me in managing this tremendous flow of creative energy. So my yoga practice has been a blessing in that area.
That is the real what's up as it relates to where I am...now to the food. I have had so much fun working with these roasted tomatoes. I worked with them in many permutations of time in the oven and temperature of the oven, as well as the ways to use them once they are prepared. So here we go:
Oven Roasted Tomatoes
1 lb of grape tomatoes
10 cloves of garlic
Extra Virgin Olive Oil, the best that you can afford
Sea Salt, or Kosher Salt
Coarse ground black pepper
Preheat your oven to 200 degrees F
Wash the grape tomatoes and slice them in half lengthwise.
Place them on a cookie sheet
Peel your cloves of garlic and thinly slice them.
Add them to your cookie sheet.
season with salt and pepper to your taste, remember that you can add more later.
Add a Generous pour of the Olive Oil
Now use your impeccably clean hands to toss the tomates with the seasoning and oil.
Spread them in a single layer and bake for 2 hours
let them cool and use them any way that you like.
they can be kept in the fridge in a tightly covered container for 2 days, please know that when you taste them they will not last that long.
