Perfect HB Eggs

I have a confession to make. I love eggs.  What is funny to me is that until just a few year ago, I never in-joyed eggs on their own, so for me this is quite a confession.  Since I have admitted my love for eggs and embraced this love, I have found more and more ways to include them in tasty treats here and there.

It is interesting to note that a properly cooked egg is a chef's pride.  So much so that it is said that a chef's toque, his fluted chef's hat, has one pleat for each way that he can cook an egg, and there are 100 pleats in a proper chef's hat.

So I want to get you started on the pleats in your chef's hat by sharing with you a simple method for a hard boiled egg.  Hard boiling an egg is really a misnomer because technically you do not let it reach and stay at a rolling boil.  When it is done right the white is tender and moist and the yolk light and bright without the dark and smelly sulfur ring around the edge.

Here are the directions and a few photographs to inspire you along the way.  

Perfect HB Eggs are a study in attention to detail more than anything, here is what you need to know. You will need a saucepan with a tight fitting lid that will fit the eggs you want to cook in a single layer.

  1. Start with cold water that covers the eggs.
  2. Turn the heat on high to get the water to a low boil.  
  3. Once it comes to a boil, set a timer for 1 minute. 
  4. Remove from the heat put on a tight fitting lid and set a timer for 10 minutes. 
  5. Fill a bowl with ice water and add the eggs and let them stand for at least 5 minutes.  
  6. This will stop the cooking process and make the eggs easier to peel.
  7. Then rinse in cold water and carefully peel them under cold running water. 

Peeled boiled eggs stay fresh in the refrigerator for one week submerged in water, (change the water every few says).  So if your family in-joys hard cooked eggs its a good idea to make a quantity on the weekend that can be used through the week for lunch boxes or a quick snack.  I like mine with hummus to adorn my salads.
