Method cooking Vs. Recipe cooking


I am a peaceful woman, so in this title I do not mean to insinuate a contest or a fight between method cooking and recipe cooking. On the contrary my goal is to assist the novice chef in becoming comfortable in expressing themselves in the kitchen.

To that end it is my job to press you out of your comfort zone. The recipes that I share here will be to challenge you to stretch and open your creativity in the kitchen.

Once you know a method of cooking you can add ingredients that are readily available or that you already have on hand in your well stocked pantry. You do not have to worry that oranges are available as opposed to lemons you will have the confidence of knowing that your granita will be just as tasty with oranges as it would have been with lemons. It is about creativity and flexibility.

For clarity there are some recipes that need to followed exactly and that do not work with seemingly similar substitutions. I found out the hard way one night that half and half is not the same as whipping cream! Most of the recipes that are specific are baking recipes and other recipes that depend more on a chemical reaction than simple warmth and assembly. You will be able to comfortably tell the difference with experience and wisdom, all of which comes with practice.
